Coffee Toffee Bars

  • ½ cup sliced almonds
  • 1 teaspoon instant coffee
  • 1 teaspoon hot water
  • 2 cups all-purpose flour
  • 1 cup brown sugar, packed
  • ¾ cup butter, softened
  • 1 egg
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 6 oz toffee candy, broken into small (1/4”) pieces
  • 2 cups semi-sweet chocolate chips

 

Preheat oven to 350 F.  Place almond slices in a baking pan and bake for 5 to 7 minutes until light golden brown. Stir once or twice to brown evenly. Set aside to cool.

 

In a separate bowl, combine instant coffee and water and stir until coffee is dissolved. In a large mixing bowl, combine the flour, sugar, coffee, butter, egg, salt and baking soda. Stir briskly until soft dough forms, or use an electric mixer at medium speed. Stir in the toffee candy pieces and mix thoroughly.  

 

Press dough into a 10” by 15” pan. Bake for 15 to 20 minutes until golden brown. While still hot, sprinkle with chocolate chips and bake for an additional minute. Remove from oven and spread the melted chocolate chips evenly over the cooked dough. Sprinkle the toasted almonds over the chocolate. Allow to cool completely before cutting.
